crunchy, garlicky brussels sprouts

what you’ll need:

¼ cup walnuts or almonds, crushed into small pieces 

1 bag brussels sprouts, shaved

2 garlic cloves, minced

2 tbsp seasoning mixture (see notes) 

¼ tsp red chili flakes (optional for more or less)

¼ cup parmesan, shredded

what you’ll do:

  1. Add walnuts to a small bag and seal. Crush the nuts until you have small pieces. 

  2. Heat olive oil in a medium-sized pan, add nuts and roast for 3-5 minutes on medium-high heat. You are looking for the nuts to get a golden color. Add a pinch of salt. 

  3. Add crushed garlic cloves and stir for about 60 seconds. 

  4. Add remaining spices and brussels sprouts to the pan with ¼ cup of water. Let the brussels cook covered for about 3-5 minutes. TIP: Shaved brussel sprouts cook quickly so make sure to check them to prevent overcooking, you don't want mussy brussels.

  5. Remove the lid, add cheese, serve, and enjoy immediately.

notes:

  1. use any seasoning you like with this. I used a garlic and herb mixture from the market that also had salt and black pepper. Using pre-mixed seasonings saves time and stress!

  2. Optional chili flakes. If you do not like spice, don’t use it. Want more? add some extra!

  3. Shaved brussel sprouts cook quickly so make sure to check them to prevent overcooking, you don't want mussy brussels.
