golden glow soup

what you’ll need:

3-4 chicken thighs (bone in)

1 yellow onion, diced

2 large carrots, diced

2 ribs celery, diced

1 handful fresh kale, stems removed & rough chop

4 cloves garlic, minced

1 inch fresh ginger, peeled & grated 

7 cups chicken or vegetable broth

1 can white beans, drained and rinsed

2 lemons, squeezed

1/4 cup tahini

1 tsp lemon zest

1 cup orzo

1/4 cup fresh dill

1 tsp dried oregano

1/2 tsp black pepper

1 tsp turmeric

what you’ll do:

  1. Add all ingredients to the crock pot EXCEPT for the orzo. 

  2. Cook on high or low depending on when you are eating.

  3. When the soup is finished, remove the chicken, add the orzo, and cover to cook for an additional 15-20 minutes.

  4. Separate the chicken from the bone, and shred it while the orzo is cooking. 

  5. Return chicken to the pot, soup is finished when the orzo finishes cooking.

  6. Top with fresh dill and a bit of lemon juice if thats your thing :) 

  7. Enjoy!
