spinach artichoke chicken orzo

what you’ll need:

½ large yellow onion, diced 

4 garlic cloves, minced

1 tbl ea. oregano & parsley

¼ tsp red chili flakes

1 large pinch of salt/pepper 

1 can artichoke, diced

2 chicken breasts, diced

2 big handfuls spinach, chopped

1 ¾ cups broth

½ cup heavy cream 

½ cup mozzarella

what you’ll do:

Pre-heat oven to 400

  1. Saute onion in an oven-safe pan with garlic and spices. (3-5 min)

  2. Add artichokes, mix, and saute. (60 seconds)

  3. Add the diced chicken to the center of the pan and brown. (5-8 minutes)

  4. Add the chopped spinach and stir. 

  5. Add the broth, cream, and orzo and bring to a boil. 

  6. Stir in ¼ cup of the mozzarella chees and bake. (10-12 minutes)

  7. Top with the remaining mozzarella and turn on the broiler for 3 minutes or until the top browns. 

  8. Let it rest for a few minutes before serving.
