Bomba Chicken

Spicy, savory, and oh-so-satisfying!

how to make your own:

What you’ll need: 

4 chicken thighs, bone-in, and skin on

1-2 tablespoons bomba sauce (Trader Joe’s)

1 tsp garlic powder

2 tsp Italian seasoning

1 tsp honey

1 14 oz bag shredded cabbage

olive oil

salt and pepper

What you’ll do:

  1. Preheat oven to 400 degrees F

  2. Pat chicken with a paper towel and place in a baking dish. 

  3. Combine all seasonings from the ingredient list from bomba sauce to honey and mix until completely incorporated. Spread all over chicken thighs. 

  4. Cover and bake for about 25 minutes.

  5. While the chicken is baking, mix shredded cabbage with about 1/8 cup of olive oil and sprinkle salt, pepper, and Italian seasoning. Mix well. 

  6. Take chicken out of the oven, carefully remove the lid, and add cabbage. Tuck in the cabbage all around the chicken so you can see the tops of the chicken and resume cooking for another 20 minutes. 

  7. Turn on the broiler for about 5 minutes until the chicken gets a little crispy on the top. Careful not to leave it in the broiler too long or else you will dry out your chicken.
