Stuffed Bell Peppers
Feel free to cut corners with this recipe and use canned corn and beans. Have fun with this recipe, add or subtract anything to personalize for your preference.

What you’ll need:
1 yellow onion, diced
1 lb ground chicken
1 package of taco seasoning
1 jar salsa of choice
1 can black beans, drained and rinsed
1 can fire-roasted corn, drained
3 cups chopped spinach
6 bell peppers, a variety of colors
1 cup shredded cheese (or more), divided
Sour cream and cilantro for garnish (optional)
What you’ll do:
Preheat oven to 350 degrees (F)
Cut tops off of bell peppers and remove seeds. Place in a baking dish, cover, and bake for 20 minutes.
Making the stuffing: heat olive oil in a pan and cook onions until softened 3-5 minutes.
Add chicken and spices. Break up the chicken and stir until all the spices are incorporated and the chicken is cooked.
Add salsa, beans, and corn. Cook another 3-5 minutes stirring frequently.
Add chopped spinach and remove from heat.
Remove peppers from the oven and fill each pepper with the ground chicken mixture evenly.
Top each pepper with cheese and bake uncovered for another 15 minutes.
Serve with sour cream, cilantro, and/or salsa.
