egg bites
what you’ll need:
8 eggs
1 cup cottage cheese
2 tbl sassy cilantro seasoning by My Sage Gourmet
salt/pepper to taste
Optional toppings:
Diced bell pepper
Diced onion
Bacon
Cilantro
These egg bites are your best friend for early, busy mornings and the perfect quick grab-and-go breakfast or snack!
what you’ll need:
- Preheat oven to 350F and grease your mini loaf pan. 
- Dice all your desired veggies. Cook and cut up bacon (if using). 
- Add eggs, cottage cheese, and seasonings to a blender and blend until smooth. 
- Pour egg mixture into greased loaf pan about ¾ of the way full, leaving room for the veggies, and for them to puff up a little. 
- Bake for 25 minutes. When finished, allow egg bites to cool for a few minutes before removing from the pan. 
- Store the bites in an air-tight container, and heat in the microwave before eating. Feel free to add salsa, or hot sauce to kick it up a notch!
