Pesto
This pesto is perfect for any pasta, chicken, and/or vegetable dish.
Make a large batch and freeze a portion so you have it on hand.
How to make your own:
What You’ll Need:
2 cups spinach
2 cups basil
½ cup freshly grated parmesan cheese
½ cup olive oil
⅓ cup pine nuts
3 cloves garlic
Juice of ½ lemon
¼ teaspoon salt, or more to taste
1/8 teaspoon crushed red pepper (optional)
⅛ teaspoon ground black pepper, or more to taste
What You’ll Do:
Add everything to a blender until all ingredients are pureed. Taste & adjust to liking.
